Gustave looks more like a pelican than a traditional eagle griffon. Probably a variety that doesn’t specialize in hunting.
New Headcanon: there are different varieties within the Griffon race as with ponies in the FiM universe.
Hence why I specified “little to no conflict to acquire food”. I know that herbivores can and will fight in certain circumstances, but it’s not the kind of pervasive fighting that would affect their cultural development much, should they become sentient.
Usually herbivores only become aggressive defense or competing for a mate.

Well, it makes sense to assume a mythological carnivorous species would take a brutal approach to affairs, as all meals would require killing. Likewise, an entirely herbivorous species like ponies would have little to no need for conflict to acquire food, and thus would not develop elements of this in their culture.
Us humans, being omnivores, have a pretty checkered past with both peaceful farming and brutal hunting under our belts over the eons. Human culture reflects this in being both peaceful and violent in somewhat equal measure, with happy tranquility and brutal violence often not being too far from each other.
In other words, the gryphons being portrayed as brutal warriors makes sense from a cultural, evolutionary and biological standpoint, so it’s a popular option.
