But I’m not talking about a normal super thin waist, I’m talking about a “where are your organs?” thin waist. Their hooves might be wider.

This is an issue with most art styles, unfortunately, and such issues exacerbate the view of what is a realistic waist. Just about everyone will have an actual slight paunch–that’s entirely normal and healthy. Thin waists are rare, not at all common.
