That would actually make for a pretty fun story/comic/whatever. Her wishing she had hands because she wants to be able to actually feel the stuff she’s moving with something other than her hooves.
With hands you can actually FEEL whatever it is you’re manipulating
With telekinesis, you have to make guesses whether you putting enough pressure based solely on visual clues
