Except for Adventure of Link, Link’s Awakening (thought the Nightmares do take on the form of Ganon at one point), Majora’s Mask, Phantom Hourglass, and Spirit Tracks… Skyward Sword does still count, though, since it reveals that Ganon is a reincarnation of Demise’s hatred…

He started out as a human according to the official timeline in Hyrule Historia, his demon form is due to his evil nature and the Triforce of Power made him turn into what reflected his own heart.
 
But if you go further back, he kinda did started off as a demon as he is the incarnation of Demise’s hatred (See Skyward Sword).
 
The first Zelda and Zelda 2 for NES are the last games of in the the Timeline.

The Ganon in Ocarina of Time resembles a demon more than all of the other incarnations of Ganon.

I think you got that backwards, Ganondorf started out as Ganon(in order of when the games came out) so he was a demon first, never started out turing into one, and if you go by the Zelda time line you start with a full demon, so he was demon-human(or human like)-demon.
