Where to begin with this one…
Engineer is a combination defense/support class, with a major emphasis on defense. The most offense they get is when they wield the gunslinger, and even then, they are still reliant on Combat Minisentries to fight due to their squishy hitpoints. A good engineer always relies on his buildings, no matter what role he’s trying to fulfill - an engineer that tries to do it solo can even be bested by a medic of equal skill, even WITH the Gunslinger. The moment an Engineer fails to have the cover or aid of a sentry gun, he’s in extreme danger to even the weakest of classes if they can play them right.
Applejack, meanwhile, is a headstrong, run-into-trouble type character, by my understanding. She’s a rodeo pony, and seems to be physical if she’s forced into any form of conflict. Far as I can tell, math isn’t her game, and the most advanced technology she utilizes is an apple cart. The only building we see her take any part of is in raising a barn - and even that’s spent mostly singing while everyone else does the work.
With the Engi’s squishy hit points and aversion to direct confrontation, we immediately have a problem with this match-up. Applejack doesn’t seem to me the type to rely on a machine to do her work for her. Maybe it’s just me, though?

Guess you’re right. Pinkie does make for a good anything.
She’s Pinkie Pie. She’d probably stab them in the back just as fast as they can blink. We already know she’s a master of disguise (a hay bale with a trench coat and Marx glasses? GENIUS!) and has wicked sneaking skills (in a black outfit. In broad daylight)
She’s probably gonna get a Kukri/Scorch Shot to the face if she did that.

Spy, maybe? I honestly can’t picture Pinkie in a suit, much less being quiet.
Maybe - but Pinkie would make a good ANYTHING. Far as I know, we haven’t seen any form of limit that Pinkie Pie suffers - even the artist seems to have ignored Pinkie Pyro more or less out of lack of interest than anything else.
I honestly feel Pinkie would be a better Heavy; She’s loud, eats a lot and attracts everyone’s attention, just like any half-decent Heavy.
I think you’re missing the point.
It seems to me that character skill is the main focus of his setups - Big Mac is big and strong, Twilight is smart, and Pinkie Pie uses gadgets (we have no evidence she isn’t smart enough to do so)
Though I will say I kinda can see Applejack as Sniper.

And Twilight is probably the only one smart enough to be the Engi.
Hell, Applejack probably fits Sniper more. The both have a funny accent, are incredibly useful when dealing with a single task yet useless if they overextend and they both have a hat by default.
