This is probably the reason. Also most people think of the wonderbolts as Air force pilots, and I think that a flightsuit is better represented by a jumpsuit, than a latex suit.

Heh, that’s an interesting Rainbow Dash costume.

It even has a little hat.

Also, how come most Wonderbolt consplays involve a jumpsuit sort of thingy, rather than the more commonly portrayed skintight design?
