Fun fact: it was only explicitly stated that the SMOKE would cover Equestria for a century. No one realized that it could still be around looooong after the dragon woke up and moved off.

I believe you are more or less correct in that line of thinking. I noted that Cadence, when her power was temporarily unified with Shining Armor’s and evidently greatly increased thereby, had that same shimmery, flowy mane that the sisters have.
Granny Smith was a young mare when Canterlot was still just a collection of tents and vendor stands, so she’s as old as a clearly ancient, historical city.

I’m not too sure that all alicorns are immortal. There seems to be at least 2 ‘tiers’ of alicorn. As Celestia and Luna (At least once her power built back up) have energy manes, while Cadance and Twilight do not. Especially given the fact that Luna didn’t have an energy mane right after her defeat, when the Elements left her weak after driving the nightmare presence out of her,but had one later when she would have recuperated, implies that it’s linked to the princess’s level of power (or at least magical energy)

I like the idea, myself. In Tolkien’s books, there was no end to the possibilities, since you just never knew if you were talking to a 200-year-old dwarf, a 150-year-old human, a 500-year-old elf, a century-old hobbit, or an ent that’s too old for reckoning.
The answer is obvious Spike. You must help Twilight create a phylactery and transform herself into a liche. Then, 500-score years hence, have Twilight perform a similar ritual to turn you into a dracoliche. You can remain at her side forever. >;)
