That can be summed up with lolfiction.
Dragon Ball characters are planet to solar system level in destruction. Yet their ki blasts don’t destroy the planet in one shot.
Same goes for Base Gurren Lagann. At the end of the first part of that series, Gurren Lagann has been calc’d to be at 5.7 exatons (high continent level destruction) yet it doesn’t destroy any continents.
Focused energy. Also, plot armor for the planet they’re on. So yeah.
Also, not usable in a fight? You do know how much energy it takes to move a celestial body like that, right? That means Celestia and Luna’s magic is powerful.
And yet, when in a fight with a peer of similar power that she is actively trying to kill, the best Nightmare Moon can bring to the fight is lasers that only leave potmarks in what they hit, at best.
Granted, Celestia surviving a hit by ones gives the alicorns a decent durability feat( a normal human wouldn’t live through that), it isn’t exactly something that says that their ability to move the sun/moon is something usable in a fight, otherwise they would, you know, use it.

The fact that having the moon in the sky at the same time as the sun means half the sky is night proves that. You can extrapolate nothing from raising/lowering the sun/moon now other than the fact that they decide when its day and when its night.

In fact, let’s do a run down on what these two are bringing to the table:
Nightmare Moon: energy blasts, incorpreal transformation, ability to control the night, gains her power from the moon and has legions of Nightmare Forces at her disposal.
Vaatu/Unalaq: energy blasts, can corrupt spirits into dark spirits, tentacles, can summon up vines, controls legions of dark spirits, waterbending (which becomes more powerful depending on the phases on the moon) and spiritbending.
Now, in regards of Nightmare Moon just dropping the moon on him. That… would not work out for three reasons.
Let’s keep in mind it’s both Unalaq and Vaatu. We saw what Vaatu is capable of: energy blasts, can summon up vines and corruption of spirits into dark spirits. We don’t really know what else he’s capable of.
