When she did the first Rainboom, we saw the compression several inches in front of her hoof. As part of the Required Secondary Powers of their flight, pegasi at extreme speeds emit an aerodynamic bubble that protects them from being ripped apart or cooked.
Pardon my physics derp, of course you’re right. So it would be because of the compression of air when travelling at supersonic speeds.
Or if she’s designed anything like a pony, she’d be a nice medium-rare by now.
Also, the heating is from the compression of the shockwave, not friction.
