Fact is, the writers really aren’t thinking too much at all when they do these things. All character have the Strength of Plot; which is to say, they’re as strong (or weak) as they need to be for the sake of the story.
 
A great deal of the examples quoted can be chalked up to cartoon physics; which really is the same thing as the Strength of Plot; as in, they’re physically capable of whatever is funnier or serves the story. Which makes them inconsistent in the long run.
 
RD flies headfirst into a mountain only to be stunned for a bit, or crashes into the ground and is hospitalized? Sure, you could try and justify it with a lot of conjecture, but it’s just as easy to use conjecture to prove something opposite elsewhere in the show.
 
There is a lot of argument for a lot of different headcanons, and nothing stands out as overwhelmingly consistent. And trying to find one in the show is futile. Just go with what makes sense to you. If you want, here is the headcanon I generally run by:
 
Unicorns: Tall, but thin. Not physically adept at all.
 
Pegasi: Small, but fierce. Capable of developing dense muscle tissue. But relatively frail from thin and/or hollow bones.
 
Earth Ponies: Tend to be large in statue overall. Generally hardy and durable, or at least healthy and vibrant.
 
And of course, each individual’s personal life-style is going to slant their physically ability a lot.
 
My headcanon is not one sole truth and neither are others. There are a lot of different ones that are all equally justifiable–this is just the one what works for me.

^ Why would they be? Pegasi by mlp history are the warrior race. Unlike the other two they seem to quickly assemble and act more like an army unit. Twice a mare pegasi have lifted a thousand on screen. The most buff pony on the show is a pegasi. There’s no prove that pegasi are smaller than the other two races.
 
Big Mac is not a stand alone for all earth ponies. Also, there are too many examples where earth ponies have been over powered physically in the show. They do, however, have the most food. So unless you’re talking about weight, I’m not sure where you are getting that headcanon from.

Yeah, they would be. But I did theorize that Earth ponies were the largest of the races, with pegasi being the shortest.

I see Unicorns as having a general tendency to be tall and thin. Elegant even.
 
And if not unicorns, I imagine Rarity to be fairly tall–so it might be genetic.
