okay, I was trying to make a joke here. A very lame one, but a joke none the less!
 
and really, all sorts of aspects of life in lordran are reprisented by flame. it’s what gave the world color from the static era of the dragons. Bonfires are essentially geysers where the first flame leaks to the surface of the world. considering that the first flame is also what made people more than the hollowed pygmies that existed underground, it makes sense that this flame of life and death, light and dark allows you to bottle up some of it’s life-giving flame therein.

From what I read, Estus is essentially just bottled fire.  
And since fire is considered the purest essence of life in this game series, it makes sense as a healing item.
