In my opinion, Twilight Sparkle makes the best Sweeney Todd:The Demon Barber of Fleet Street. Or, should I say ‘Sparkley Todd:The Demon Barber of Sweet Street’. ;)

Sweeney Todd/Benjamin Barker - Twilight Sparkle (unicorn)
 
Mrs. Lovette - Pinkamena Diane Pie (of Cupcakes fame)
 
Judge Turpin - Discord (or Lord Tirek, whichever one works)
 
Beadle Bamford - Prince Blueblood (just to spite him)
 
Johanna - Fluttershy
 
Anthony Hope - Rainbow Dash (I don’t ship FlutterDash (I ship RariDash, hardcore), but I admit it’s cute)
 
Tobias ‘Toby’ Ragg - Scootaloo (I know in the show she can’t sing, but just think of her as acting the part of the character instead of actually being the character)
 
Adolfo Pirelli - Either Trixie or Sunset Shimmer (I don’t care which, just so long as Pirelli is played by a rival of Twilight’s)
 
Begger Woman/Lucy Barker - Rarity (I know a marriage of two unicorns most likely won’t lead to a Pegasus foal, but please bear with me here)
