What if the frequency of threats to Equestria didn’t suddenly drop after Nightmare Moon, then spike back up by episode one, but remained constant or were averted by Celestia alone all that time, and she hasn’t been doing much in the show because she’s getting the break from world saving she would have earned in this scenario?  
According to comics, Chrysalis was a threat Celestia fought solo, putting the signature holes in her and her race. Literally beat so bad, the damage was passed on genetically.

In detail? Discovered the elements of harmony, banished Tirek, discovered the elements of harmony, turned discord to stone, banished Sombra, put the moon in nightmare moon and literally everything else that happened a thousand years before twilight was born. So not much.

Seeing how she ruled almost a 1000 years up to the point the mane 6 took over the elements and started taking care of things, probably still a lot.
