Actually, think about why she has a phoenix. If she were to own any other kind of pet, it would die in such a short span of time compared her 1000+ years of life. I guess a phoenix is the only option to have so she doesn’t have to cycle through hundreds of pets.

Celestia keeps a phoenix because she finds the concept of mortality so amusing that she wants to see it in action again and again. Without letting others know.
