I like to think she had a bad experience with wild dragons and doesn’t like them, instead she lives in Canterlot and runs a restaurant. She considers herself more of a pony than a dragon, so living in a civilized Equestrian city makes her happy. She meets Spike and sees that he is just like her. They become friends and bond over their mutual self-loathing and rejection/hatred of other dragons and non-ponies.

Not all the unicorns, so far in the show only Twilight has been shown to have a dragon assistant. Since Sunset used to be the student of Celestia, we can always assume she might have hatched a dragon too.

Of the Old World, Europe and Asia are the two continents that use ponies and horses most. Africa is zebras, gazelle, and antelope, India and South Asia is elephants, Australia is… Tapirs, ah, screw it. XD
 
In the Americas, horses immigrated from Eurasia, and donkey and mules… Well, one of them went there too, but I’ve forgotten which one is the impotent hybrid. :3

I;m wondering…  
Are Chinese Dragons or Ponies? Or both?  
Are Ponies multi-ethnic? In the season 5 premier, Twilight mentioned Meadowbrook as a eastern unicorn. She can easily be a Eats Asian theme. But also Middle Eastern or Indian, depending on what eastern in Equestria means.
 
I’m guessing Ponies also live outside Equestria and possibly on the newly revealed continent? Maretonia seems like a foreign Pony Kingdom.
