Sunset Shimmer’s backstory was kinda rushed without being given further detail. In layman’s terms, she just sprouted like a mushroom and like many one-episode wonders in the cartoon.

That still wouldn’t work, because she’s coming from the South (you can see Canterlot to the North). She’d have had to have intentionally gone around Ponyville to approach it from that direction.
Maybe there’s both a mirror in Canterlot and at whatever Twilight’s castle is called.
