tl;dr: Starlight has plenty of potential for growth and interaction over an arc, Sunset is already developed and would have hardly anything to go on plus would be an essential Twilight clone with a new paint job.

Given how production vs. broadcasting goes, though, there’s no way they responded to criticism after the finale and put it into the premiere. Doesn’t work that fast. Twilight’s little swoop was clearly just a meta thing to make the ending feel more happy/excited - which is kind of what I’m attributing all the easy forgiveness of Starlight to.

Yeah, they try to keep the ending of episodes positive. I’m thinking and hoping that’s the reason she got along so well - but that we’ll actually see some suspicions and such in the next season as anon was talking about here.
I would like to see one episode with Sunset Shimmer centred around her trying to get forgiveness from and repair her relationship with Celestia. Most of the episode would be spent say travelling from ponyville where the mirror now seems to be to Canterlot and Sunset letting paranoia overcome her even with the others trying to console her (maybe with some stories about their own encounters, Mr. Smartie pants, Philomena, etc). Throw in a few vivid overblown imaginations of the meeting and then some very awkward moments before the meeting and during when Sunset thinks Celestia won’t forgive her but does so without question.
As a full time member thought would take some tweeking of her character, such as new flaws that she hasn’t overcome yet that are maybe linked to her original grievances with Celestia’s way of teach and her old attitude. That or just retconning her completely from the movies.

Thing is Sunset has already been mostly developed, has a place to call home, no actual problems or such with her group, so she doesn’t have anything to grow on. And she’s even more similar to Twilight than Starlight, given that Sunset even had the personal student part.
Starlight however would be almost a blank slate. Able to do the missed opportunies that EQG missed with Sunset.
Both are Twilight but for want of a nail, Sunset has grown as a character but she’s still just a rehash of Twilight’s Heroes Journey, so would Starlight if she were developed. Either would serve as a proxy protagonist, but to pretend that either would be more than a new Twilight because Twilight’s character arc finished back in Season 3 is a little absurd.
