The reason we can see red is because it was a positive adaptation for our primate ancestors to be able to see the color as it allowed them to identify ripe fruit, which is easier to digest.

now the question is as follows: would that mean they’d see all reds as greens, or all greens as reds (if translated into our trichromatic vision)?

Horses don’t have a blind spot directly in front of them, they have a blind spot directly in front of and BELOW them.
 
Also, this is assuming Equestrians have the same eye problems as Earth’s horses.
