Seems that the skeleton more represents Sunset’s ghost.

I think the implication of this picture is that Sunset BECAME Death (or at the very least a Psychopomp) and is here to escort the now-elderly Aria Blaze (+1000 years really catches up with you when the magical artifact that allowed you to sustain yourself on emotional energy is destroyed) to the Great Beyond because… symbolism, I guess?
 
I mean, maybe Sunset didn’t LITERALLY become the Grim Reaper in-universe, but she’s definitely the main reason why the Dazzlings are no longer able to do what they do and thus dooming them to either death via rapid magical aging or gradual mortality.

I don’t think that Sunset became an alicorn. We just know that she was used to further empower the harmony that defeated the sirens. We have to note also that she wasn’t even rainbowfied as the six were, even if she did get a moment of glory.
