If she’d given the operation to an operative actually trained to infiltrate and impersonate, rather than insisting on doing it herself, they would have won. Hell, even a common drone would have done the job, since that’s still their job anyways.
Because she’s a shitty actress with no sense of subtlety.
The key flaw is Chrysalis herself.
She describes conquering and subjugating Equestria as a “day [she’s] dreamed of since she was small”. She’s a little too far gone for compromise.
Celestia would have been reasonable true, but it was because Chrysalis decided that she’d like to be Queen of everything that ultimately doomed her plan. Of course, maybe if she hadn’t gone in herself to be Cadance and did a little better recon on how Cadance actually behaved, things might have gone a little more in her favor.

If ponies were willing to give up their love to feed Changelings, then the species wouldn’t have shapeshifting abilities. Granted, she was being a meglomanical bitch during the entire scheme, maybe she could have reached a compromise with Celestia. Probably not, considering the personalities of both of them.
Makes you wonder if she could’ve gotten food any other way, if she just tried?
