basically when they were doing to “I love you” bit Paper found out who she really was, thanks to Luna and Moon and so Paper was all like “you lied to me” and relived when she hear Celestia ran off she hated the person Celestia ran off for and finding out it was Her.

Nope, don’t buy it. I like to think Celestia has more logic and mental fortitude than a high-school girl.
And don’t give me that “it’s love” crap, love makes you do rash, stupid decisions, yes, but it doesn’t completely rewrite your personality and emotional state. Plus, I would think that a mare who has lived over a thousand years has enough maturity and strength to talk her issues out rather than ignore them until she can no longer take it.
Then again, I am against Celestia being a big ball of angst who will cry at everything, so what do I know.

Well it was the best and only explanation i ever had when my sister/mother went ballistic over something stupid for no apparent reason.
Then why support it by saying “she must be on…it”? To be honest, I get most annoyed on it when someone says “you’re angry, you must be on your period.”?
And well adjusted people find ways to deal with their problems before they reach their limit.

but “love” can transform people and make them act totally different from their usual self.
So… this is someone’s shipping fiction between Celestia and an OC?
Even with context, it seems out of character, she seems more the kind that would voice her concerns calmly to Paper rather than let it all build up until she snaps.
I mean, she rules a kingdom, for chrisakes, do you think somebody who’s that mentally unstable would do such a good job for over a thousand years?
Here here! She’s always been nothing if not calm and measured, save when there is actual danger afoot.

You kinda answered your question yourself.
Getting a little annoyed under some circumstaness from time to time often will often undergo a memetic mutation into “Always gets annoyed under certain circumstaness”.
I don’t think “angrily snapping at people who have nothing to do with her issues” is very in character for Celestia…

Yeah, I totally remember that episode in the show where Celestia freaks out and starts smashing things because she has anger management issues. Oh wait no, I was thinking of Pinkie Pie. Celestia doesn’t really ever lose her temper, even when Canterlot is being invaded by changelings.
So, as far as I can tell, the guard that called her your highness is her lover from a past life that was reincarnated, who then joined the guard. At the same time, Celestia has been going to the same school as that guy, disguised as pinklestia.
I believe that pinklestia and the guard are together, however he doesn’t know that pinklestia is Celestia, and he joined the guard without knowing it, and I have no idea if any of what I’m saying is making sense or is even correct at all.
