So does Jonathan, they both use Hamon and since Celestia and Luna are siblings and each other’s opposites, it only makes sense for them to be Jonathan and Dio. Joseph and Dio don’t fight until Stardust Crusaders Egypt arc and he’s not the main JoJo anymore there.
But Joseph has the power of the sun. And since Dio is Luna, it only makes sense that Joseph is Celestia.

Jotaro- Twilght, because she and her friends(as the Stardust Crusaders) beat Nightmare Moon
People like to associate Joseph with Rainbow or Pinkie and Jotaro with Applejack or Twilight. It’d seem because Joseph personality and fighting style is abrupt and unpredictable and Jotaro’s is quick, calculated, and incredibly destructive. :3
