gelatin is produced from the bones of cows, or pigs. usually cows. they literally call it “beef gelatin.” cows are more popular because pigs are considered non-kosher. but they don’t make gelatin from horses.

Yeah, my sister also can’t have gluten and she has also remarked to me that the trending idea among some people that gluten-free is “better for you” at least had the positive result that she can now buy those things for a lot less.

It’s already been said a sufficient amount of times here, but yes, there are emulsifiers other than gelatin. For instance, jellies and jams use pectin, which is plant based.

Seriously, first thing that occurred to me. It’s not as if actual goddamn honest vegetarians vegans are a recent development, and– shockingly enough– they also like many of the same sorts of foods that non-vegans like, and want reasonable facsimiles/substitutions. My wife can’t have gluten, but she still eats plenty of bread and crackers and muffins, et cetera, because there’s a thriving industry dedicated to providing gluten-free alternative foods for hipsters and trendsters and self-diagnosing pearlclutchers, which accidentally also helps people with legit medical issues.
