Biologically they have no gender, but mentally they be males, females, gay, straight, what have you, the same as ponies. However their shape subconsciously mimics their mental state. He thought he was female at one point so he appeared female, and when he came out as male his appearance slowly shifted over time to appear male :D
And, you can probably tell I’m super unfamiliar with the whole topic of transgender and all that, since I probably got a million terms wrong and probably didn’t word it very well, so hopefully you get what I’m saying XD

Mattie was a filly when he was younger, but as he grew older, he decided he’d be happier as a stallion, so he just became one (which is a pretty simple process for a slime pony, as there’s no biological difference between males and female of their species).

Lol yeah, that’d make things a lot easier. Some goo ponies do have more androgynous appearances, but for the most part they’re male or female. They look and act like ponies because their evolution from just primitive slime creatures into what they are today was influenced by ambient pony magic. The only real reason they have genders and preferences at all, along with pony shapes in the first place, is because ponies do :D
Their “true” appearance reflects who they are mentally but can change over time. As he grew up and came out as identifying as male, his true appearance changed to reflect it :D
If only it were that easy for all non-binary people.
(Also, considering how goo ponies aren’t locked in as mares or stallions, I imagine most of them probably wouldn’t completely identify as completely male or female, and many of them would likely appear mostly androgynous.)
