Its not using or defending its web and its described as hunting. Its clearly not a sedentary ambush predator.
 
And the broodmother thing shows its not solitary either. So the problem isn’t how much one of those things eats, but how much a whole group of them will eat, which will be even more…
 
Lastly, the whole “eats once a week” thing relies heavily how much it eats compared to its own mass. If this thing eats 10% of its own bodymass in one meal it could go for a month without food. But thats also a 20 ton meal…  
A meal of a less than 0.0004% of its mass however will not last as long…  
The problem is less, the frequency of the meals really, than it is about the shear amount of sustenance a predator of 200+ tons would need to survive. Regardless of whether it eats 5 times per day or once per month.

What do these spiders eat normally?  
It looks like its at least 5 meters across and likely over 10 meters long. Eyeballing would put it at over 200 cubic metres of mass, so it will weigh more than that, or it can float in water.  
A T-rex would need an estimated 40.000 calories or so every day to avoid starving, but a T-rex only weights 7-9 tons. At 200 tons or more, that means that spider would need at least 22 times more. A normal person of around 80 kilos contains a total of around 110.000 calories or about 1.375 calories per kilo, so that spider would need to eat around 650 kilos of human flesh per day to avoid starvation.  
And these spiders also produce large amounts of poison and (I’m assuming) dozens of gallons of acid per day if its going to help dissolving enough rock to help something that size to dig anything, which requires more energy, so the real amount of food the spider needs per day is likely much higher, and higher still if it wants to stay well fed, and not just barely above starving.  
And that reference to a brood mother would suggest that these spiders are social to some degree, meaning there’s not just one of them down there, but groups of them.  
Just what kind of flora lives in those cave systems that can supply the equivalent of several tons of meat per day for even a few of these spider to survive? Are there tens of thousands of buffalo roaming about down there or something?  
Since ponies and humans wouldn’t really sustain a spider unless it eats a whole lot of them every day. So why would the spider hunt down a pony or two to bring back? How much is this “brood mother” going to appreciate the equivalent of a mouthful or two or food? Isn’t the spider just wasting its time going after prey as small as humans or ponies?
