Even though I throw a lot of anatomy and physiology out the window for the sake of this fetish, I’m really not sure about that. Though I love the idea of her having absurdly strong innards that she’s entirely in control of, producing such strong enzymes and acids is kinda much, even for me, haha. She’ll probably just keep to organic materials, and cough up things that won’t dissolve in gastric juices within a normal digestion period.
 
But, eh, we’re talking about a voracious talking horse that’s meant to be overpowered with this stuff. Sure, I guess she could, but her body wouldn’t really have use for it unless she could integrate metal and other inorganic deposits into her bones or hooves.
 
…Honestly, that’d be kinda cool. Let’s keep that.

What about things that are tougher like metal or plastics? Can she digest that?

Best not to think too hard about this. If it’s something you’re into, then good; but if not, then that’s good as well.
 
But to answer your questions:  
Vorepone can be selective since of whatever happens to whoever’s inside of her; she has total control of what her digestive system does to its contents. She has intestines, and her prey just traversed all the way through them to no avail. I really don’t like the “stomach only” depiction of predators in vore, surprisingly; there is a lot of passageway after it that is skipped more often than not. It’s made even more irksome knowing your anatomy. :P  
I’m kinda idealistic in that I like the idea of (featureless) ponies being completely efficient of what goes in them, so there’s no waste at all (despite that outhouses are canon).  
It’s a particularly sensitive area, so… Never know when the prey struggling between the legs is better than grinding against something. :P
 
Riding off of the “no waste” idea, she could digest her prey and completely absorb their remains if she so wished. It’s a fetish, so logic is mostly out the window. :P

Once the sensual high of someone struggling between the legs all the way back there dies off, she could always add another one to bring it back. And wash, rinse, and repeat. Though, it’d be more likely they’d digest rather than get squeezed all the way up and out again. Too much work, after all.
