But does anyone who writes the show know that? Taking that book as canon will probably lead to contradictions, since I think the lady who wrote it isn’t writing for the show anymore…

He’s a proffesional. Trixie wasn’t the first magician he was with. In fact it’s the same Manticore that was with Hoofdini. Of course that raises another question. Where did she get the money to pay for that Manticore?

As to how she caught it, easy. She put up flyers and announced the casting call. Then all the interested manticores came to her trailer to read some scripts and demonstrate their talents. Then they left, and for most of them, they were not to call Trixie, Trixie would (not) call them. But a few manticores were called back for a second audition, and the best of them Trixie caught with a pawprint on a contract.
 
Given that they’re manticores, it’s safe to assume an audition on the “casting couch” was not involved.

Well, we know (from the Journal of the two sisters) that manticores can “talk” with some ponies (Luna did that in the book) similar to Fluttershy. Maybe Trixie learned a spell to communicate with him and offered food, a new home or something for his help. The chain might just be for a visual effect that says “Look, he is dangerous and will eat you”
