I believe Saffron is one of the most, if not THE most expensive spice there is.
Turmeric is often used as cheaper substitutes for the yellow dye and vaguely similar taste.
The next expensive spice would be cardamon. Which is also heavily used in Indian cuisine.
It’s called a crocus. Saffron is rare and expensive because crocuses bloom in late winter, leaving a very small window of opportunity to collect the pollen.
