Both names have been used in official material, so both! Of course Slice of Life lets us know the truth (she goes by Bon Bon after having had a very… different… career as Secret Agent Sweetie Drops. Which makes Sweetie Drops probably her birth name, but she’s definitely known as Bon Bon to everyone in Ponyville now, including, until recently, even her wife very best friend Lyra.)
More importantly… this is incredibly adorable.
 
I’m glad they settled it that way rather than forced the (IMO) far inferior Sweetie Drops as her canon name.
