Let’s see what the wookieepedia says:  
“Skywalker flew to the swamp planet of Dagobah at the posthumous advice of his late mentor, Kenobi, where he received Jedi training from the exiled Jedi Master Yoda. However, Skywalker was lured into a trap by Vader at Cloud City on Bespin, where he engaged the Sith Lord in a lightsaber duel, discovering Vader’s identity as his father and losing his hand in the process.
 
One year later, Skywalker fought in the Battle of Endor before surrendering himself to Vader, realizing he had to confront his father and the Galactic Emperor, Sheev Palpatine, who was also the Sith Lord Darth Sidious. I marked it in bold. He declared himself a Jedi and nobody really opposed it, but he was never formally admitted in the Order, so technically he isn’t.  
In the case of Ventress it’s different, though, and much clearer. She was rejected and cast away.  
Have you seen The Clone Wars? I’m a bit hestitant to say more because I don’t want to spoil things

Under that logic, Luke isn’t a Jedi, because he didn’t finish his training, either.

Not all dark Force users are sith.  
The Clone Wars is still considered canon according to the wookieepedia. In TCW Asajj Ventress is a dark Force user who isn’t a sith. She was Dooku’s apprentice and was meant to become a sith, but she was cut loose and never finished her training.

Well, there were other force Traditions, but they aren’t canon anymore.

You know, there could be other Force users than either Jedi or Sith.
