On the DVD commentary they once touched upon stuff like that. The rule is, what defines Rick and Morty as Rick and Morty is their DNA. That you’d never see a “Fish Rick and Morty”, as the DNA had to be human in origin. They also said the hammer Morty didn’t start out as a hammer, but was changed into one.
 
However, they then showed an actual fish Rick and Morty in the new episode, AND an alien version as well. Both were likely a callback joke to that conversation.
 
Also, there’s the concept of the finite curve, which is mentioned once or twice in the series. There’s infinite universes and timelines, but Rick cannot access all of them. The Ricks you see in the show are from a specific “sector”, known as the central finite curve. They can’t travel outside of it, everything they do is confined there. So you could always say the pony version lived in a timeline outside of it.
