Yeah, some species are clearly coded after certain ethnicity, but to attempt to give the ponies an specific one - when they’re made as characters for anyone to relate to - is almost certainly a pretty racist move.
 
Also, while Zebras, Arabian Ponies (horses?) and Buffalos are very obviously coded, I never got the impression that the Gryphons represented any sort of culture. Then again, the monarchy-like background could suggest some European inspiration.

Though I still like the ideas for some creatures like:  
Zebra = Africans  
Arabian Ponies = Arabs  
Buffalo = (Great Plain) Native Americans  
Griffons = Often Europeans
 
Ponies however based Real-Life horses, they can be either European or Asian in origin but exist almost worldwide since they are domesticated and follow where Humans go.

It’s an idea waited far too long, I’ve been out of the game. I should add more details on her robe and her necklace string should have been red.
