Hell no. You can include them in your diet but actually living off them would be impossible. They’re very low on nutrients (nearly 95% of their raw mass is water) and most of that is carb. Only trace amounts of fat and protein. Disregarding the imbalance for now, you would need to eat more than 9kg of thistle to meet the bare minimum DAILY energy intake, I’d love to see you give that a try.

I think his point was that we’re almost completely unable to digest cellulose. You can eat grass and flowers and gain a little of nutrients from them, but they won’t sustain you like they will an actual herbivore.
It’s true that some flowers are toxic. (And she’ll definitely want to know which.) However, many are edible. Figs are flowers; you can candy violets and fry dandelions, and many others can be eaten in various ways.
