There’s a big problem with Chrysalis turning Scoots into some green gunky building material… it’s making the assumption that she actually participates in such mundane tasks.

Depends on viewpoint really. This could just be a way of extracting love. The green gunk that changelings spit out could be what is left of the perchance victim after all love is drained, and given that changelings cant feel love they cant feed themselves, making them true parasites. But as a waste of love, probably not. (Unless kept alive in order to syphon off small amounts of love and giving it time to regenerate. That is the efficiency of love haevesting. Unless of course it dont work that way.)
 
For labor… maaaaaaayyybeeeee… probably… If used as building material it means less labor is required to build said structure, but a extra pair of hooves would increase the labor force and cut construction times with the same amount. Not to mention any future construction orojects.
 
Also I think my tired brain is looking into this to much and I should probably take the joke (that was quite funny) at face value.
