I did low-poly models back then that matched N64 level with shading and texturing and whatnot, I didn’t like it as much.
Low Poly only really works in a modern setting with a pixel-art like style, from what I’ve felt.
EDIT: My low-poly models themselves drew up from this, kept changing them to look better and better.

N64 would probably have the same texture quality, only with a smudgy texture filter over it.
