Well, perhaps they evolved the same kind of weather-changing feet that reindeer have? :P  
Those do have weird ‘squishy’ hooves, specifically so that they can swell up with moisture when the weather heats up and the snow melts - to give them better grip, when there’s something to grip.  
Would be quite useful for a race that comes from the frozen north - yaknow, before they were forced to migrate south to warmer climates, away from the Windigos, and settle the land that’d eventually be known as ‘Equestria’ - and that spends a lot of time climbing mountains.  
It’d explain how they have such absurdly good grip on slopes, especially if they’re secretly two-toed beings like the reindeer, rather than one-toed like horses, but that’d be stretching.

in reality they’re not soft at all: They’re made of the same material their hooves are (keratin, same as your fingernails) and bone. And have to be regularly scraped out to keep them clean.
