Oh come on, they changed her appearance just because they thought it would look better with her new outfit, how could there have not been drama?
I supposed that it had some relation with its reformation due to that phoenix transformation in my past is not today, implying that she was reborn or something similar lol
but it was nothing less than an aesthetic improvement
Colors for any toy product art are generally bad (eg the second image OP posted).
As best as we that are tracking color key guides, Sunset’ hair only changed color once. Unfortunately some of the Boulder Media shorts use the old pre-reformed colors.

Right but I thought Boulder Media was using their own character models (since they were animating using ToonBoom Harmony instead of Flash).
Strangely, her hair color seems tied to her outfit. That Summertime Short where she gets a pet has her back in her old outfit and her hair color is just as blazing as before.

The usual issue with using pre made assets.
If they update one, they have to update all. They can also accidentally miss updating one.
It’s like how Applejack always was missing her freckles when she was running in season one, because that running asset was missing the freckles.
