My theory: All royal guards look the same so what if they take off their armour they change back to how they actually look Because the armour has appearance changing properties like a magic enhanced armour

Theory:
 
The guards’ armour is enchanted to conceal their appearance so they can act as agents of the crown without fear of retribution from organised criminals. The helmet clearly holds an enchantment for eye colour, while the rest of the armour conceals their coat colour and cutie mark. This also explains why all the guards are white/black.

The Royal Guard all wear enchanted armor to make them all look alike, to symbolize that the powers of royalty all work as a union, to symbolize that each and every guard work as one, to serve the sisters and protect Equestria.
