It annoys me a little bit just how often people forget these details, so I made some comparison.
 
Most ponies have oval shaped eyes, but some ponies (for example Twilight) have almond shaped eyes. Most ponies have highlights in their eyes, but some ponies (for example Trixie) doesn’t. There are also ponies like Fluttershy, having special eyes. Drawing wrong eyes may make your ponies look strange. Same thing applies to OCs.
 
Or maybe it doesn’t really matter. In that case, ignore all I said.

Interesting. I wonder why that happened. She still only had a single catchlight per eye back in No Second Prances, but it looks like she got a second in To Where and Back Again. An animation error that they never bothered to fix, perhaps? Or maybe it was too irritating when copying parts and poses from other models to keep removing them. Of course, were that the case, then why not just let her have the highlights under her eyes as well?

Dragonpone is correct. He is referring to the white circles that represent reflected light. Highlights. Trixie was noted for only having one highlight before, but they’ve dropped that and given her two like most other ponies as of late.
 
In your picture, you refer to the gradient coloring of the iris as a “highlight” which is not the correct term.

Don’t forget eyelashes! The mane six in particular all have distinct varieties between them, straight, curly, extra curly; three vs four, lashes on top vs top and bottom, etc.
