And yet every time I hear it, it used to explain quantum mechanics. Stating the second you observe the cat in any way the experiment changes. Or that in another universe the cat is always dead or some other bull shit.

You’re ignoring that those things would have the same effect as opening the box, and the box would most likely be sealed. You’re also completely unaware of the point of the thought experiment, as it was originally based on schrodinger’s own misunderstanding of quantum mechanics, and is not meant to be a demonstration of how quantum mechanics works.
Oh, that one is the easiest one to break. If you can’t open the box, then X ray it, or simply listen for breathing, or better yet wait for the cat to open the box on their own.
