It was also clear that the others were not happy doing what they weren’t meant to do. I didn’t see any issue with it.
 
I mean, case in point: I’m really good with computer hardware and troubleshooting, but I don’t like it. It’s not at all fun for me, and often times it’s a source of stress and headaches.
 
Even if the others helped the others out, they’d still be stuck doing something they don’t like, but they’d be good at it. Man, that’s just depressing.

The gems she used in that she discovered in that big boulder and she used in the school play were what helped her to discover that her super special talent was fashion.

Actually, Rarity’s skill was gem finding, being a fashion designer was what she used the gems for

In my own profession, there is a saying that I can relate with absolute certainty. Other professions may differ, but for art: “Someone without talent who works hard will outperform someone with talent who does not.”
 
Applejack has the knowledge of practical needs and functionality. With a little stitching help from Fluttershy, she might have been able to design some rather functional ensembles. I actually thought that some of her designs had a down to earth charm about them, and some of them might have made good costumes.

All of them were failing hard, despite showing at least minimal skill in those tasks.
 
The theory is that they were trying to use talents that they don’t have, rather than the talents that the do have.

By helping them they meant helping them realize their destiny was somewhere else, not helping them doing something they can’t.

They probably just wanted to not have to do it.  
Pinkie in particular expressed a huge level of disdain for what she was doing.

i know she’s not a designer but she must have even rudimentary skills. i can’t imagine Granny never sat her down and taught her how to sew.

In this case, completely taking over makes sense because they were completely inept at the jobs they were all attempting. Sometimes, it’s faster to just do the job yourself rather than take the time to hold someone by the hoof to teach them, especially since the larger picture was helping all of Ponyville.
