My headcanon is they are personally chosen by the princess of the night and affected by her magic that “transforms” them. It’s pretty much just for looks and a bit of extra power.
 
I have a unicorn-OC who is affected in the same way, pointy ears, slit pupils and pointy horn.

Personally I think it makes more sense if they were the Pony Versions of Gargoyles, linked with Princess Luna. When Nightmare Moon was banned, they turned into Stone.
