Alicorns would represent deities, or rather divine archetypes universal in all sentient cultures. Celestia is the archetype for the heavenly lord (Zeus, Elagabal, Tengri, etc.), Cadence the fertility goddess (Ishtar, Venus, Anahita, etc.), and so on.
Even monotheistic religions (which all worship Fausticorn in my headcanon) would still preserve the archetypes in the form of saint-worship. I wouldn’t be surprised if the pony version of Jungian psychoanalysis included alicorn archetypes.
