How in the flying flip flop does evolution know about alchemy or chemistry?  
If it has something to do with them having a chemist related sense,fine.  
But no way in hell does mind evolve someone into knowledge about chemicals and alchemy.
 
Though i question why did ponies walk on the clouds so often to require an evolutionary involvement is beyond me :P,or wings for that matter.  
And how earth ponies are stronger than races that require strength in survival(ex.Diamond Dogs/Minotaur) for that.  
Personally I see Zebras as Earth Ponies(or a bit stronger if you like) of a different color and culture,with their knowledge(possibly better than the ponies’) of chemistry/alchemy being caused of their environment’s conditions(due to the possibly large quantity of different fauna in there),once their society came to being of course.

What I’m trying to say is that each race is specialised in a certain way and those specialisations may affect performance at certain jobs…
 
There’s no reason why an alicorn or changeling couldn’t do demoman’s job but him being a zebra just its better with my headcannon

I can see where you’re coming from but hear me out on this. To me, each race has some kind of evolutionary adaptation that makes them good at what they do;
 
Pegasi have wings and can walk on clouds  
Unicorns have horns and an instinctive magical capability  
Earth ponies are hardier and stronger than the other races (headcannon - YMMV)  
Diamond dogs have developed large paws and slit pupils for digging in dim light and fighting on the surface  
Buffalo are strong, hardy and fast to deal with natural predators and cope in their environment  
Changelings have the ability to disguise themselves to get close to their prey/food source
 
 
So what do zebras have going for them?  
My headcannon is something shamanistic so I stick with the alchemical trait

I know that,but if you’re telling me that Zebras are good at brewing/alchemy because they’re Zebras,well…  
I know that there are some races that their common characteristics help them in some jobs(ie. Diamond dogs for digging)  
But by no means does that mean that each race has to represent a job or their only job,a race is a race,not a stereotype.  
And no brain function “evolved” us to make some of us brewers or farmers,we learned that with what we have been taught,wanted or needed,not because I happen to be coming from a certain country insert farmer/brewer stereotype country.  
Also I was going with common person stereotype job(with mistakes,I admit)

I’m taking everything geographical out of the race. And as for jobs, correlation DOES NOT IMPLY causation. Perhaps each race has inherent traits that make them good at what they do?
 
And for the record:  
America = fascist religious zealots  
UK = conservative autocracy of mediocrity  
China = tea brewers with an industrial powerhouse  
Germany = economic powerhouse (industrial & financial)  
Russian = subjugated proletariat under dictatorship  
French = striking wine producers, cheese makers, cabaret creators and philosophers  
Greece = economically failing, polluted country that grows olives

I just personally can’t see the Demoman as a zebra though. He’s a bit too cocky.

Hell,I’m just saying that he’s/she’s arguably changing his race(or are other races non-existant in some fanons)?  
Considering that most people(and possibly canon too) see Zebras as the “Pony” equivalent of Africans considering her hut/house and pracitces seem more like stereotypical\ hollywood(though I’m not sure if it’s accurate for RL) African “voodoo” than the home of the more western/american/english/part possible European habits and habitats of the ponies :P.
 
That’s why I put the slash between them,though you’re correct in that point(Curses!)
 
I’m not saying he/she has to,just saying that it would make (personally) more sense,while enjoying the work overall(though why would a quadraped walk like that is more …eh)  
I’m just a bit annoyed that some/most of the fandom thinks that everything is centered around them(I like to call it the “Tokyo’s/America’s/London’s the center of the world” effect).
 
Just annoyance at a mild element which goes against my “beliefs”(as…strict as they are) about the FiM world itself,no biggie :P.

I figure Zebras would be shaman like Zecora though.  
Profound, heavy accent, smart, etc.  
Besides, the Demoman is a black Scotsman. I’m not entirely sure what his other half would be.  
And everyone draws things their own way. Saying he should be a Zebra in this is essentially like saying all human Twilights should be black.

Zebras are much more common in Africa than horses(or their sub-breeds,the ponies),which are more common in Europe and Murrica(though they exist in Asia) and considering how uncreative some people get with the races,I’m only saying what makes more sense , more interesting and less pony-centered unfortunate implications.
 
It’s like you’re telling me that jobs come from race,by that logic:  
Murrica’s military  
Brittish are tea brewers  
Germans are bankers  
Russians are bartenders and brewers  
The french are artists  
and Greece is compromised by philosophers or slackers.

Instead of implying that zebras are the cannon black guys in FiM, why not make them the alchemists and chemists of FiM?  
Zecora is usually seen with some kind of potion or poultice and plenty of mixing and heating apparatus and the demoman is known for mixing his own explosives.
