I now like to think Griffons settled in the old country that the ponies left, it being an analogue of most of the non-English speaking European countries. Germany, France, Spain, Poland, some of the Nordic etc.
 
Maybe not Greek and Roman cultures though since the Pegasi seemed to have that.

I’ve always headcanoned that firearms are a griffin invention, as they both have the digits to build, use, and repair them, plus no visible magic to make firearms a viable endeavor (unlike ponies, whose unicorns’ magic bolts can easily provide the ranged combat advantage).
