My vote is usually for the mind staying mostly the same, but not necessarily holding back so much in changing the body. This facilitates an adjustment period in which they come to terms with their new form, plus it doesn’t destroy who they were beforehand identity-wise.

While there are exceptions sometimes, i Usually have to agree about characters losing their entire identity. It’s more ‘fun’ when the character is still her but with an (not so radically) altered mind

When you change species you never know what will happen.
 
It’s not like a Belt of Masculinity/Femininity where you just change gender and you’re fine, this is worse the just simple a polymorph…she even got tagged… :/

Considering we see talking cows, apparently just as intelligent as ponies in the series ,living on the Apple family’s farm no less, I’m not to sure of the logic behind this.
