I always assumed it was just joking around, and being facecious, because back in the Season 2 days, she barely had any episodes focused on her, and when she did it was usually sharing it with another character, or gets overshadowed by another.
 
When Rarity didn’t get any new episodes in Season 3, some joked she was “the new background pony.”
 
My advice, don’t take the fandom to seriously. Also, in regards people getting offended by the “Scootachicken” jokes, and claim it’s bullying, (bullying a fictional character?) ironically Scootaloo’s voice said she thinks the “Scootachicken” meme is hilarious, and loves to go around saying, “I’m not a chicken!” in Scoots’ voice at convenions, and such.

SEEE you all made her cry! That’s why I love all ponies!! Especially earth ponies. :D

It’s odd that so many fans call her a background pony, despite that shes appeared in more overall episodes than any of the mane 6, and was the only one to appear in every episode of S3.

Why would her portrayal be better in say an “R-rated cartoon?”

The sad thing is, Applejack could so easily be portrayed better than she almost always is. Just not in a G-rated cartoon.
