This mare’s name is Sunshine Petals, and she is voiced by Tress MacNeille. She hosts her very own segment at the end of every adventure starting from Godzilla VS Disney Town, titled Sunshine Petals Says (the segment made its grand return in Super Snail after 2 years of absence starting from Snack Party at the Friendship Express). And other than that, Sunshine Petals has a mother who lives in Hope Hollow, named Petunia Petals.

Well first, I think your idea with daytime -> vendor, nighttime -> dancer has a good base for a story.  
Then second, all of my thoughts of her would just be an interaction with the Flower Ponies. They were good friends, but Daisy Dukes decided to go to Manehattan (because of life, opportunities or something).
 
While she became a pretty well-known night dancer, her flower business is modest. Something like that.^^

Well, I mentioned exotic dancing before, but I was trying to tie into the Daisy Duke name…so maybe a fashion designer would be better suited? Would tie into the entire “Rarity Takes Manehattan” episode.
 
I kind of want to know now. :P
