I could honestly imagine courts just de facto treating anything sapient as “human”. Would cause issues for differing psychology (should an alien sapient species even fall under human law if their psychology is different enough?), but if it’s similar enough I imagine judges would be somewhat reasonable about it.
 
As unreasonable as courts can be, they generally try to be reasonable. And there’s always “the law you won’t be told” (Jury anollement).
 
Though given Ponies, Griffons, Yaks, Zebras, Minotaurs - Equestria probably just does this automatically.

There have been on and off efforts of legal scholars looking into extending human rights to all sapient beings, and under the laws of many countries, you can make a good go at arguing that they already do apply to all human level sapient beings.

Except Twilight isn’t human, so charges of human rights violations won’t stick. Maybe animal cruelty would be more appropriate? Or is Sci-Twi taking advantage of some sort of legal grey area here?
