You have a point there, both on the plot and the coloring. Whatever power they summoned needed the six to have Rainbow Power AND Sunset to merely awaken. I’m guessing she didn’t need Rainbow Power due to the elusive nature of her element, since it only appeared after the Rainbow of Light awoke.
 
If she did gain Rainbow Power, my bet would be that the effect on her would not only include more varied colors, but be far more dramatic.
 
…then again, where does that leave Dash’s purpose in terms of Rainbow Rocks and Rainbow power? Instead of gaining more colors, when she has all of them already, Rainbow Power gives her a super form with energy hair. Hell, Human Dash emulated a Super Saiyan 2, and Equestria Dash emulated a SS3 0.0

It’s pretty, but doesn’t that defeat the purpose of Rainbow Rocks, to add extra streaks of color to the hair? Here, Sunny has stuck to one sliver of the color wheel.
